The spicy complement, characteristic of this eternal international variety, is rendered even more valuable by fruity nuances which suggest banana, papaya and ripe pineapple with striking notes of orange-blossom flower. Rich and almost opulent with exemplary harmony.

Colour: straw-coloured yellow with green hues
On the nose: initial impressions are those typical of a great wine, as is Chardonnay, alternating clear and distinct varietal aromas, such as acacia, broom and mimosa, fruited nuances which suggest banana, papaya, ripe pineapple, criss-crossed with suggestive memories of orange-blossom flowers
On the palate: sumptuous, almost opulent, entirely in proportion to the kaleidoscope of base perfumes, exemplary harmony, enveloping and silky, pleasant beyond your wildest expectations, full-bodied and long-lasting, progressive and juicy
Characteristics: Chardonnay could be described as the archetype of the perfect wine, aesthetically outstanding, with soft and charming notes, exceptional to drink. Simply pure nectar which fully expresses its varietal qualities and extraordinary Sicilian terroir
To eat with: bucatini pasta with sardines, spaghetti with deep-sea octopus, tagliolini with lobster, cannelloni with fish ragù; excellent with crab, oven-baked sword-fish mini-rolls and sliced dentex fish with herbs.

Area of production: the hinterland of Agrigento: the municipalities of Canicattì, Naro, Racalmuto, Sant’Angelo Muxaro, Porto Empedocle, Realmonte, Siculiana and Giardina Gallotti; the hinterland of Palermo: the municipality of Monreale
Soil type: sandy-silt soils, of medium consistency with an alkaline reaction due to the presence of limestone
Height of land: from 200m to 600m
Average age of vines: 15 years
Training system: predominantly VSP (vertical shoot positioning) with renewable spurred cordon espalier
No. of plants/hectare: 4,000 – 5,000
Yield: 8 tonnes
Grapes picked: at the end of August
Fermentation: in steel tanks at a controlled temperature of 16ºC for 15 days
